Sabudana khichdi formula
Non-sticky sabudana khichdi
Ingredients
- 1 cup sabudana
- about 3/4 cup water for soaking, adjusted by variety
- 1/2 cup roasted crushed peanuts
- 1 medium boiled or diced potato
- 1–2 tbsp ghee or permitted oil
- 1/2 tsp cumin
- sendha namak to taste
- lime and coriander if used in your vrat
Method
- Rinse sabudana repeatedly until the runoff is mostly clear.
- Soak with just enough water for the pearls to hydrate rather than float; start with about 3/4 cup and adjust by variety.
- After 4–6 hours or overnight, press a pearl between fingers; it should crush without a hard center.
- Heat fat, temper cumin, cook potato, then add sabudana mixed with peanuts and salt.
- Toss over medium heat until the pearls turn translucent; do not over-stir into a sticky mass.
- Finish with lime and herbs if permitted.
Soaking behavior varies by brand and pearl size. The key is controlled hydration rather than a fixed water depth.
Why sabudana becomes gummy
- Too much soaking water leaves free starch.
- Insufficient rinsing keeps surface starch on the pearls.
- Cooking too long makes hydrated pearls collapse.
- Skipping peanuts removes a dry ingredient that helps separate the pearls.
