Atte ka halwa is a comforting whole-wheat sweet made with flour, ghee, sugar and water. It is prepared for different pujas and family gatherings, and its short ingredient list makes it a practical Dhanteras offering.
Ingredients for four modest portions
- 1 cup whole-wheat atta.
- 1/3 to 1/2 cup ghee, depending on texture preference.
- 1/2 to 3/4 cup sugar, adjusted to taste.
- 2 to 2 1/2 cups water, heated separately.
- 1/4 teaspoon ground cardamom and a few chopped nuts, optional.
Cook slowly for a deep roasted flavor
Warm the ghee in a heavy pan over medium-low heat. Add the atta and stir continuously, breaking up lumps and moving flour from the edges into the center. Continue until the mixture smells nutty and turns a deeper golden shade; rushing this stage can leave a raw-flour taste.
Dissolve sugar in the hot water or add it after the liquid, depending on your family's method. Carefully pour hot water into the roasted flour in batches while stirring: the mixture may bubble and splatter. Cook until the halwa thickens and pulls together. Stir in cardamom and garnish only if desired.

Serve as prasad
Allow it to cool to a safe eating temperature. Offer a small clean portion before distributing the rest. Use a separate utensil when serving, and refrigerate leftovers promptly. Wheat, dairy and nuts are common allergens; share ingredient information when offering the sweet to guests.
A small bowl of well-made halwa is more meaningful than a huge batch that cannot be stored or shared safely.
