Dhania panjiri is a fragrant, crumbly prasad that turns humble coriander into a festive sweet. Versions differ by family; this one uses roasted coriander powder, ghee, sugar and crunchy nuts without requiring a lengthy cooking session.
Ingredients for a small family batch
- 1 cup ground coriander seeds (dhania powder), preferably freshly ground.
- 1/3 cup ghee; adjust slightly as needed for a crumbly, not greasy, mixture.
- 1/2 to 3/4 cup powdered sugar, to taste, added only after cooling.
- 1/4 cup chopped almonds or cashews, plus 2 tablespoons raisins if desired.
- 2 tablespoons dried coconut or melon seeds, optional.
How to prepare dhania panjiri
- Warm a heavy pan on low heat and gently roast the coriander powder, stirring until fragrant. Do not let it darken sharply or burn.
- Add ghee in portions and continue stirring until the powder is evenly toasted and aromatic.
- Remove from the heat, then toast nuts or coconut separately if using them.
- Allow the coriander mixture to cool until just warm or at room temperature. Mix in powdered sugar and nuts, breaking up lumps.
- Taste, adjust sweetness, transfer to a clean covered bowl and reserve the puja portion.

Make the offering safely
Use fresh ingredients and a dry spoon. Nuts are a major allergen, so label the prasad if sharing widely. Never serve a mixture that has been left in a hot, humid room for an extended period. Homemade sweets can be prepared a day ahead if stored appropriately.
The distinctive charm of dhania panjiri is its warm, herbal aroma: a festive flavor built around an inexpensive kitchen seed.
